I'm afraid you would not be able to use purchase lists in that way. These lists were designed for individual orders / individual cart purchases so they cannot support 1000+ lines. They're not meant to be general lists of products.

Perhaps it would help to look at a Product Table plugin (like https://barn2.com/wordpress-plugins/woocommerce-product-table/ ) where you can create a searchable table (e.g. where users can search for school items there).
