This is a feature that would depend on WooCommerce Settings + Theme Settings, our plugin would not be able to influence this.
Some things you can check:
In WooCommerce -> Settings -> Products -> Inventory, make sure stock management is enabled. Also under "Stock display format" you may want to select "always show quantity in stock".
If that is already configured, it may have to do with your theme settings. I am not sure which theme you are using,

I would like to ad stock levels to the shop catalogue pages. Is there and option or snippet to do this.
