Yes, you can completely replace the 'cart' with a 'quote' option for all products.
To do this, go to B2BKing -> Dynamic Rules and create a "Replace Cart with Quote" rule. You can set this rule for logged in users, logged out, or all users.
With this rule, yes, customers can add products to a quote list and request the quote at the end, without seeing prices.

For technical reasons, it is needed to set a 'regular price' for products. Customers will not see this price and it does not matter what price you set. You can set $1 for all products. But for technical reasons you need to enter a price, otherwise products cannot be added to the quote (woocommerce thinks they are not purchasable).
