(1) There are no add-ons or feature restrictions based on plan. The only difference between plans is the number of sites the plugin can be used on. Indeed all levels include all features.
(2) Yes, the plugin will allow customers to purchase either regular (single-vendor) orders, OR multi-vendor orders through a single checkout / payment.
Basically there is a single order and payment, but the plugin splits that into multiple sub-orders. Each vendor receives their own sub-order with that vendor's products. From the customer's perspective, the checkout and payment only happens once.
(3) That's just an optional way of configuring things.
You can also just allow vendors to register and start selling right away. The plugin tries to be flexible and there are many different ways in which this can be set up,

2. Will the customer be able to checkout/pay for their entire order (multi vendors/multi products) on my marketplace site?
3. Do the vendors have to purchase a membership or subscription to be on my marketplace or is that just an option?
