What you describe sounds very much like a caching problem. That would cause different states of the dashboard to be cached, resulting in old data showing up or products appearing to be missing based on the cache status.
Please check if you have any caching plugins active like Litespeed Cache, WP Rocket, etc. You would need to go to that plugin's settings and exclude the vendor dashboard page completely from caching. This also applies if you have caching from other sources like Cloudflare.
If you'd like, we can also troubleshoot this directly on the site. For that, we would need a backend login to the site or a staging clone site.
